YUMMY, NOT-SO PICTURE PERFECT TURKEY |

1. Select a turkey large enough for generous servings; approximately two-thirds of a pound/person. I will use a 10 pound turkey, plenty for my small group of five leaving me some leftovers for soup and noodles. a. If turkey is frozen, set in refrigerator 3 days ahead of time to completely thaw. b. If fresh or unfrozen, roast within 2 days for optimum quality. 2. In a clean sink, unwrap and remove the giblets. Rinse the giblets and set aside in a small saucepan to boil and use in oven stuffing and gravy. Rinse the turkey inside and out until water is clear then pat dry with a paper towel. 3. Preheat oven to 350 degrees Fahrenheit. Remove top rack and position lower rack to 2nd from bottom level. 4. Line a shallow baking pan with aluminum foil with enough extra foil on each side to pull up and cover the turkey. If you have a wire rack, use it; not required. 5. Put the turkey breast side up in the pan. Rub the turkey with softened butter, margarine or olive oil. Sprinkle with sage, pepper, salt and other seasons of preference. 6. Pull foil up over the turkey and loosely lock edges to keep steam/juices inside. 7. Place in preheated oven and bake for approximately 15 minutes/pound. a. Closed Roast -- About 2 hours and 30 minutes for my 10 pound turkey. If you put stuffing inside the turkey, bake for another 30 to 45 minutes longer. b. Pull Turkey out of oven. Carefully open and pull back foil and roll down to the sides of the pan. Insert a poultry fork deeply into the thigh and breast just once in each place. Clear juices should run out. If juices are pink, rewrap and roast for another 30 minutes. c. Baste the turkey with juices in the pan or brush with more butter, margarine or olive oil. Do not cover. Place back in the oven at the same rack level. d. Open Roast -- About 30 minutes or until golden brown. Juices should all be clear, timer should have activated in a store bought/commercially packaged turkey and a poultry thermometer should register 180-185 degrees Fahrenheit. 8. Let the Turkey cool for at least 15 minutes before carving. Cover with fresh foil to keep warm. ![]() |
